Prairie Pale Ale

Bitterness: 36 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.6% v/v (5.2% w/w)
Water: Used bottled spring water.
Grain: 5.00 lb. American 2-row
.5 lb. American crystal 40L
.5 lb. Dextrine malt (Cara-Pils)
Mash: 57% efficiency
Added grains to 7.5 quarts of 165° strike water. Mashed for one hour at 152°. Recirculated until clear. Rinsed with 7.5 quarts of 175° water. Collected 3- gallons of wort.
Boil: 60 minutes SG 1.102 3.0 gallons
4.0 lb. Light dry malt extract
Added 1- teaspoon of Irish Moss for last 15- minutes of boil.
Hops: 1.5 oz. Perle (8% AA, 60 min.)
1.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
.5 oz. Perle (aroma)
Yeast: Used a tube of Wyeast Y1056T and made a one quart starter. Pitched only the yeast of bottom of flask after decanting.
Log: Fermented in primary for one week. Transferred to secondary and dry hopped with 1-oz of Cascade leaf hops for 3- weeks.
Carbonation: Bottle conditioned using 1 1/3 cups of light DME. Boiled DME in 1- quart of water
Tasting: Bottled 5-6-02, tasted hydrometer sample. Nice hop bouquet, very good hop flavor. I can't wait until it's ready to drink from the bottle!
