mash in with 8 gallons @ 125° (1qt/lb of grain) hold at 125° for 30 minutes (protein rest) gently raise to 155° with recirculation hold at 155° for 60 minutes (starch conversion) gently raise to 165° with recirculation (mash out) sparge with 5 gallons @170° for 1 hour Collect 1st 12 gallons to boil kettle |
