Hop Harvest Ale
An Autumn American Pale Ale, made to accent
my first harvest of Cascade hops. Bitter
and Alcoholic with a malty Alt beer yeast
to balance.

Grain: | .5 lb. British brown 1 lb. Belgian Lt crystal 7L |

Steep: | Pour loose grains into small stock pot add water to cover. Bring to 155°F, and hold for 45min. Pour wort through strainer into boil pot, add water to 4 gallons. Bring to boil. Add malt extract stir to prevent scorching. | |||||||
Boil: | 60 minutes | SG 1.066 | 4.5 gallons | |||||

Hops: | 2 oz. Cascade (5.4% AA, 60 min.) 2 oz. Cascade (5.4% AA, 30 min.) 2 oz. Cascade (aroma) |

Yeast: | 1007 German Ale yeast Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55o F. Flocculation low; apparent attenuation 73-77%. (55-66o F) |

Log: | Dry hopped for two months with more Cascade (~4oz?). Primed with 3/4cup Dry LME Bottled |

Tasting: | Wow this was good. Classic citrus notes, little apricot flavor in the malt. Might use some oak chips next time. |
