I brewed this as requested by my 20-something kid, for a party he was having with his friends.

Mash in at 160 deg F. Mash rest 154 deg F for 90 minutes. Sparge at 170 deg F. |

Boil: | 80 minutes | SG 1.042 | 11.5 gallons | |||||
Add 2 tsp Irish moss at 40 min into boil. | ||||||||
Hops: | 1.05 oz. Chinook (12% AA, 60 min.) 1.05 oz. Saaz (3.75% AA, 45 min.) 1.05 oz. Saaz (3.75% AA, 30 min.) 1.05 oz. Saaz (3.75% AA, 15 min.) |

Yeast: | Wyeast Scottish Ale, 1728 XL (activator pack). This yeast takes-off and ferments-out quickly at 72F. | |||||||
Log: | Primary fermentation in glass at 72F for 5-6 days. Secondary fermentation in glass at 72F for 7 days. |

One 5-gal cornelius, I added 3/4 C of corn sugar. The other 5-gal corny, I force-carbonated. |

Tasting: | Very clean, with exquisite head & head retention. Good enough for the little b*stard and his friends. |
