Fence Hopping Pale

american pale ale using homegrown whole hops of unknown origin (they just grew on the fence!!)

Type: All grain Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 45 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.5% v/v (5.1% w/w)
Water: lake superior water
Grain: 9 lb. 8 oz. British pale
4 oz. German Munich
8 oz. American crystal 15L
8 oz. Dextrine malt (Cara-Pils)
Mash: 75% efficiency
Mash in the lower - mid 150's with about 3.25 gallons of water, and sparge at 175F using little extra sparge water, ~ 5.5 gallons, to make sure you get a full sized batch... Keep in mind those whole hops will retain some of the wort in your brew kettle.
Boil: minutes SG 1.061 5 gallons
Add 1 tsp Irish Moss last 20 minutes
Hops: 2 oz. Hops o' the Fence (home grown / unknown) (4.5% AA, 60 min.)
2 oz. Hops o' the Fence (home grown) (4.5% AA, 15 min.)
1 oz. Hops o' the Fence (home grown) (4.5% AA, 5 min.)
1 oz. Hops o' the Fence (dry hop) (aroma)
Yeast: basic Wyeast 1056 American Ale (activator pack)
Log: brewing date: Saturday, October 9th, brewed in Duluth MN. Dry hop after krauesen starts to subside.
Carbonation: 1.75 - 2 volumes CO2 using corn sugar.
