Simcoe Blonde

Another in my series of single-hop Blonde Ales. Since Simcoe
is high alpha, this one is more bitter than the others.
Note the recipe is for 6 gallons.

Beer: Simcoe Blonde Style: American Pale Ale
Type: All grain Size: 6 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 56 IBU
OG: 1.051 FG: 1.012
Alcohol: 5.0% v/v (3.9% w/w)
Water: Softer is better, but use what you have.
Grain: 10 lb. Weyermann Pilsner
1 lb. Weyermann Wheat malt
8 oz. Weyermann CaraHell
Mash: 70% efficiency
Mash relatively low in the saccharification range, around 150°F.
Boil: 75 minutes SG 1.043 7. gallons
Keep the boil time short to avoid extra darkening of the wort.
Hops: 1 oz. Simcoe (12.3% AA, 60 min.)
1 oz. Simcoe (12.3% AA, 15 min.)
1 oz. Simcoe (12.3% AA, 0 min.)
Yeast: Wyeast 1056 American Ale, or something suitably low-impact.
Log: Ferment at the low end of the range for the yeast you use.
Carbonation: Carbonate at normal or slightly higher level.
Tasting: This should come out as a pale, crisp, clean brew.
