Summer Pale Ale with Lemon

This is a simple, light-colored pale ale w/ lemon flavor.

Type: All grain Size: 5.75 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 35 IBU
OG: 1.051 FG: 1.012
Alcohol: 5.1% v/v (4.0% w/w)
Water: Moderately soft Manhattan, KS tap water

1/2 tsp gypsum in strike water
1/2 tsp gypsum in sparge water
Grain: 10 lb. 4 oz. American 2-row
5 oz. American crystal 40L
12 oz. Dextrine malt (Cara-Pils)
Mash: 71% efficiency
Add 12.5 quarts (3 gal + 1 pint) strike water at 135 F, hold 30 minutes at 122 F
Add 6.6 Qts (1 gal, 2 Qt, 19 oz) boiling water to bring temp to 150 F.
Hold 60 minutes at 150.
Stir and drain (1st batch sparge)
Add 13.5 qts (3 gal + 3 pints) 175 water, stir, wait, drain (2nd batch sparge)
Collect 7 gallons wort
Boil: 60 minutes SG 1.042 7 gallons
1 tsp irish moss 15 min
zest of 1 lemon 15 min

zest of 1 lemon 2 min
Hops: .65 oz. Columbus (13% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Cascade (6% AA, 2 min.)
.5 oz. Saaz (3.75% AA, 2 min.)
Yeast: WLP001 California Ale
Log: Dry hop 1/2 oz cascade and zest of 2 lemons.
Tasting: The lemon flavor was a bit strong initially, but had mellowed very nicely after about a month in the bottles. I might reduce the amount of lemon zest a bit if I brewed this again. It's a very crisp APA with the hops predominating.
