Harvest Ale

First attempt at an AG Pumpkin/Holiday ale. Adapted from other recipes, but expanded the grain bill to go more with a harvest theme. 1 16 oz. can of 100% pure Pumpkin is added to the mash after mash-in and temperature stabilization.

Bitterness: 33 IBU
OG: 1.060 FG: 1.008
Alcohol: 6.8% v/v (5.3% w/w)
Water: Unfiltered Tap Water
Grain: 8 lb. 8 oz. American 2-row
8 oz. Wheat malt
1 lb. American Munich
8 oz. American crystal 40L
0 oz.
1 lb. 0 oz. Flaked barley
1 lb. Flaked rye
Mash: 60% efficiency
150°F for 40 minutes. Batch Sparged. Add 1 16oz. can 100% Pumpkin after Mash-in.
Boil: 60 minutes SG 1.060 5 gallons
12 oz. Honey
1 Tablet WhirFloc (15 min)
Hops: 1 oz. Cluster (7% AA, 60 min.)
1 oz. Willamette (5% AA, 15 min.)
Yeast: Safale US-56 Slurry
Log: 1.5 Tablespoons Pumpkin Pie Spice and 2 ounces (4 Tbsp)Vanilla extract added at Flameout
Carbonation: 2.6 volumes Keg: 10.7 psi @ 35°F
Tasting: Very well balanced ale with a beautiful orange color. The spice additions are subtle, but noticeable; other brewers may wish to add additional spices after initial fermentation for stronger flavor, but IMO it is perfect as is. Will age very well. Actual FG was 1.004 at 60F.
