Before the boil and using a separate saucepan, dip some water out of the brewpot and heat, not boiling. Slowly add the extract, stirring often and mixing well. Add back to the brewpot. This avoids the extract from sinking and burning. | ||||||||
Hops: | 1. oz. Chinook (12% AA, 60 min.) 1. oz. Cascade (5.25% AA, 15 min.) |

Yeast: | Dry Nottingham packet,11 grams, re-hydrated according to Danstar labs. | |||||||
Log: | Full hour boil. 2 weeks in fermentor at 68 degrees F.; 2 weeks bottle-conditioning at same temp. Better chorus of flavor with 3 weeks or more conditioning. | |||||||
Carbonation: | 3.1 oz. cane sugar, boiled in two cups water. Nice head! | |||||||
Tasting: | Nice balance of malt and hop character on palate. Fragrant and slightly fruity on nose. A hop finish that slaps your face like a cute lover. Add more dry malt extract to bring the abv up higher. |
