Dave's Fave
After over twenty batches, this is my favorite.
The Cascade hops is clearly evident in this brew,
which is reminiscent of a Sierra Nevada pale ale.
I love this beer!

Water: | I used tap water (I live in Austin, TX. The source is surface water from area reservoirs.) I did not add any salts. |

Steep: | The crystal malt was steeped for 30 minutes at 155 F. | |||||||
Boil: | 60 minutes | SG 1.106 | 2.5 gallons | |||||
7 lb. Light malt extract | ||||||||
Irish moss is optional, IMHO. I used one teaspoon the last 10 minutes and got a good clear beer. |

Hops: | 1.5 oz. Cascade (6% AA, 60 min.) .75 oz. Cascade (6% AA, 15 min.) .75 oz. Cascade (aroma) |

Yeast: | I used Nottingham dry ale yeast, but Wyeast 1056 would probably produce an even better beer. |

Log: | Primary for 1 week; secondary 1 week. | |||||||
Carbonation: | Primed with 3/4 cups corn sugar and bottle conditioned two weeks prior to drinking. |

Tasting: | Eminently drinkable with a great aroma; the taste is tangy and aftertaste refreshing. |
