Ginger Beer

This was inspired by the ginger beer at PF Changs (found out they use a pale ale and mix with ginger extract when poured) and adapted fro Morgan Pierceheart's Ginger beer recipe.

Beer: Ginger Beer Style: American Pale Ale
Type: Extract Size: 5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 16 IBU
OG: 1.052 FG: 1.004
Alcohol: 6.2% v/v (4.8% w/w)
Water: Used tap water that set to allow cholorine to clear. Added 1 tsp gypsum and 1 tsp irish moss.
Boil: 60 minutes SG 1.047 5.5 gallons
3 lb. Light malt extract
4 lb. Amber malt extract
Hops: 1 oz. Willamette (4.5% AA, 60 min.)
1 oz. Willamette (aroma)
Yeast: Whitelabs WLP001 California Ale Yeast (liquid)
Log: Added 2 oz of fresh grated ginger at 60 minutes and at 5 minutes.
Carbonation: Kegged.
Tasting: First impressions - yuck! Turned out I haven't learned to carbonate well yet, and once I got the carbination level up to where it should be this turned out to be a clean, smooth, gingery ale. A good balance of light hops and ginger flavor.
