Step infusion mash starts w/11 quarts 138 degree water; hold @ 128 degrees for 30 minutes. Add 5 quarts boiling water and hold @ 152 degrees for 90 minutes. | ||||||||

1 tbs. Irish Moss added 15 minutes before mash out. | ||||||||

Log: | Brew on 4/10/99. Ferment @ 68 degrees for 7 days in plastic. Transfer to glass secondary on 4/17/99. Hydrometer reading 1.012 @ transfer to secondary. 1 oz. Fuggles (4.4 AA) added as dry hops to secondary on 4/18/99. Plan to use gelatin in a couple of days to clarify. | |||||||
Carbonation: | 3/4 cup of corn sugar added to bucket for bottle conditioning. |
