I really wanted to use a slurry of Wyeast 2112 that I had ready.
I know it isn't the correct yeast for this style, but its
flavor profile doesn't hurt this beer. Any neutral yeast would probably work well.

Yeast: | I used a slurry of Wyeast 2112 harvested from a 5 gal. batch. I fed it 16 oz. starter wort at the start of the mash. Got a 2 hr. lag. | |||||||
Log: | Fermented in primary 2 weeks at 67 F. I added .5 oz Cascade and .5 oz. Willamette at knockout for aroma. I also dryhopped with .5 oz. Cascade and .5 oz Willamette in secondary for 3 weeks. The 1 oz. Cascade and .5 oz. Perle listed at 30 min. were really first-wort-hopped; I believe they add bitterness at about a 30 min. boil level. The FWH adds incredible hop flavor very smoothly. | |||||||
Carbonation: | Primed with 3/4 cup corn sugar at bottling time. | |||||||
Tasting: | Tasted at bottling - very good. The hops were old, so I think the IBU figures are a bit overstated. I will use fresh hops next time. The combination of Cascade with Willamette as dryhops is outstanding. |
