Poor Man's Pale
2 lbs of 6-row (at 160 linter) has enough enzimes to convert up to 4.3 lbs of rice, so this recipe is at the limit of these proportions without effecting the ABV.

Presoak rinsed, short grain overnight in enough water to cover 3 inches. Add soaked rice to 3 gallons boiling water and cook until tender (proteins are gelatinized). Cool to below 160F before adding malt and hold at 150-160 for 2 hours to convert all rice starch. | ||||||||
