Tradewinds Mango Pale Ale

A mango pale ale brewed for our 2010 Hawaiian Luau-themed Memorial Day party.

Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 8 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Water: 1 Tablespoon 5.2 Mash Stabilizer and 1 tsp gypsum.
Grain: 7 lb. American 2-row
8 oz. Gambrinus Honey Malt
8 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
1 lb. Flaked wheat
Mash: 80% efficiency
Mash grains at 153°F for 60 minutes using 1.3 qt per pound of grain. Continuously sparge w/ 180°F water to attain 6.5 gal.
Boil: 60 minutes SG 1.039 7 gallons
Add 1 tsp Irish Moss last 15 minutes of boil.
Hops: .5 oz. Tettnang (4.00% AA, 60 min.)
.5 oz. Tettnang (aroma)
Yeast: White Labs 005 in a 1 qt. starter.
Log: Primary at 70°F for 5-10 days until activity subsides. Secondary for 2 weeks at 60°F. Rack into keg and add 1 quart organic bottled mango juice, and two chopped mangoes (in muslin bag) directly into keg.
Carbonation: Force carbonate.
