1 lb. American crystal 40L
Steep: Steep grains in 2 gallons of water at 155 degrees for 30 minutes. Rinse grains with 1/2 gallon of 170 degree water and add resulting liquid to brewpot.
Boil: 60 minutes SG 1.114 2.5 gallons
3.3 lb. Light malt extract
3 lb. Light dry malt extract
Add Irish Moss final 15 min of boil
Hops: .5 oz. Perle (8.2% AA, 60 min.)
.5 oz. Magnum (13.1% AA, 60 min.)
.5 oz. Perle (8.2% AA, 30 min.)
.5 oz. Magnum (13.1% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade Leaf (aroma)
Yeast: Cool wort to +/-80 degrees. Add water to wort to get 5-1/2 gallons and 72 degrees

Pitched Dry Ale Yeast - SAF US-05 American Ale Yeast
Log: Ferment at 68-70 degrees for 1 week or until bubbling ceases. Rack to secondary fermenter and suspend 1oz of Cascade leaf hops in brew, ferment 1 additional week.
Carbonation: 3/4 cup corn sugar
