Batch sparge using 4.1 gallons first mash at 150°. With 0.1 gal per lb uptake in grain, will get 3 gal from first mash. Vorlauf and drain. Stir in add'l 3 gal at 180°, wait 10 min and then vorlauf and drain again. | ||||||||

Add Super Moss at 15 min. Cascade aroma hops at shut off, Amarillo & Centenniel dry hop. | ||||||||

Tasting: | Big hop aroma of grapefruit, tangerine, peaches, and pine - a bit more than the commercial one, but quite nice. Hop flavor is much more earthy than aroma. Honey malt, even though very small amount used, is big with a light honey sweetness plus rye/munich providing perfect balance to the moderate bitterness. A very nice beer that tends to make my rotation at least once a year (or at least a close proximation). |
