A second try at my really nice usual Scotch ale recipe. This one got a first place at the Concours de bière Montréalais in 2000. A good Scotch ale!!

Beer: Weeee Scottish II Style: Strong Scotch Ale
Type: All grain Size: 5 gallons
Color:
79 HCU (~30 SRM)
Bitterness: 28 IBU
OG: 1.087 FG: 1.021
Alcohol: 8.5% v/v (6.7% w/w)
Grain: 5.3kg British pale
350g Wheat malt
250g American Munich
400g Peated Malt
300g American crystal 40L
200g Belgian Special B
300g American chocolate
Mash: 75% efficiency
mash in 67c for 60 minutes. Mash out 75c for 5 minutes.
Boil: 60 minutes SG 1.072 6 gallons
Hops: 1 oz. Perle (8% AA, 60 min.)
.25 oz. Mt. Hood (4.5% AA, 60 min.)
Yeast: WLP 028 Edinburgh Scottish ale yeast
