Pascal's Weeee Scottish II -- partial mash

This is my modification of an all grain recipe (Wee Scotish II) posted by another brewer to a partial mash version.

Type: Partial mash Size: 5.25 gallons
Color:
90 HCU (~33 SRM)
Bitterness: 27 IBU
OG: 1.087 FG: 1.021
Alcohol: 8.5% v/v (6.6% w/w)
Water: My local water is very poor. I use bottled and treat with 1-4 tsp. gypsum and/or Calcium Carbonate (depending on the recipe), as well as 2 grams of regular salt and/or a few grams of epsom salts.
Grain: 2 lb. 2 oz. British pale
13 oz. Wheat malt
9 oz. American Munich
1 lb. Peated Malt
12 oz. American crystal 40L
7 oz. Belgian Special B
13 oz. American chocolate
Mash: 80% efficiency
mash in 67c for 75 minutes. Mash out 75c for 5 minutes.
Boil: 60 minutes SG 1.114 4 gallons
6 lb. Light dry malt extract
Hops: 1.5 oz. Perle (8% AA, 60 min.)
.25 oz. Mt. Hood (4.5% AA, 60 min.)
Yeast: WLP 028 Edinburgh Scottish ale yeast
Log: Brewed on 24 January 2004. O.G. = 1.089 Fermenting at 66-68 F.
Carbonation: 2.0 volumes Corn Sugar: 3.12 oz. for 5 gallons @ 21°C
