Wee Heavy --Partial Mash

This is a partial mash adaptation of an all grain recipe, we'll see how it turns out.

Type: Partial mash Size: 5.25 gallons
Color:
45 HCU (~20 SRM)
Bitterness: 30 IBU
OG: 1.073 FG: 1.020
Alcohol: 6.9% v/v (5.4% w/w)
Water: My local water is very poor. I use bottled and treat with 1-4 tsp. gypsum and/or Calcium Carbonate (depending on the recipe), as well as 2 grams of regular salt and/or a few grams of epsom salts.
Grain: 2 lb. 12 oz. British pale
8 oz. British Peated Malt
1 lb. 2 oz. Belgian biscuit
1 lb. 2 oz. American crystal 80L
14 oz. Dextrine malt (Cara-Pils)
14 oz. Belgian CaraMunich
Mash: 80% efficiency
Use 1qt/lb of water to mash at 155° F for 75 minutes. Add heat to knockout @ 175° F for 10 min. Sparge with 1/2 G per 1 lb of grain.
Boil: 75 minutes SG 1.086 4.5 gallons
4 lb. Light dry malt extract
Hops: 2 oz. Willamette (5% AA, 75 min.)
.5 oz. Willamette (5% AA, 30 min.)
Yeast: White Labs Edinburgh Yeast
