Doggie Dubh Wee Heavy
This Wee Heavy Ale is basically my Scottish Ale on steroids. The large amount of malt extract used results in a high alcohol content and big, malty flavors, balanced by the hops.

Log: | After the grains have been steeped, pour the results into the brewpot, bring it to a boil, and add the DME and brown sugar. Top it off to 4 gallons. Start the timer when it starts boiling again and boil for 60 minutes. Ferment this beer at a lower temperature for a longer period of time to avoid getting any fruit flavors from a fast carbonation. After two weeks rack it to the secondary fermenter and add a grain bag with 1 - 2 oz of French oak chips, which have been soaked for a week in single malt Scotch. Leave it in the secondary for at least one week. |
