Fritz the Piper

I wanted to make a high gravity ale using noble hops and the category it fit in was Strong Scotch Ale. So I named it Fritz the Piper

Beer: Fritz the Piper Style: Strong Scotch Ale
Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 35 IBU
OG: 1.080 FG: 1.017
Alcohol: 8.2% v/v (6.4% w/w)
Water: 6 gallons of RO water and 1 TSP Gypsum
Grain: 4 oz. American crystal 60L
4 oz. Raw Red wheat
Steep: Sttep the grains in 160 deg water for 30 minutes. Dunked the bag a few time and gave it a couple of gentle squeezes.
Boil: 60 minutes SG 1.067 6 gallons
8.3 lb. Light malt extract
2 lb. Light dry malt extract
Added 1 tsp Irish Moss, 1/2 tsp diamonium phosphate, 1/2 tsp More Beer yeast nutrient.
Hops: 2 oz. Hallertauer (3.6% AA, 60 min.)
1.5 oz. Saaz (3.0% AA, 30 min.)
1 oz. Saaz (aroma)
Yeast: Lallemond Nottingham, started in pint of wort for 40 minutes.

Oxygenated for 60 minutes with filtered airstone and aquarium air pump.
Carbonation: Will Carbonate in the bottle 3/4 cups corn sugar in 5 gallons
