Bitterness: 34 IBU
OG: 1.102 FG: 1.028
Alcohol: 9.6% v/v (7.5% w/w)
Water: Spring Water
Grain: 2 lb. German Munich
8 oz. American victory
1 lb. Dextrine malt (Cara-Pils)
8 oz. British crystal 70-80L
5 oz. Roasted barley
8 oz. Flaked barley
2 oz. Peated Malt
Steep: Steep grains in (3) gallons of 160 water for 30 min. rinse bag with (1) gallon of 170
add water to make (7) gallons and bring to boil, back down and add LME
Boil: 90 minutes SG 1.073 7.0 gallons
12 lb. Light malt extract
Irish moss at 15 min. to go in the boil.
Hops: 1.0 oz. Kent Goldings (5% AA, 60 min.)
1.0 oz. Kent Goldings (5% AA, 30 min.)
1.0 oz. Willamette (5% AA, 10 min.)
1.0 oz. Willamette (5% AA, 1 min.)
Yeast: WLP028 Edinburgh Scottish Ale Yeast
Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.
Attenuation: 70-75%
Flocculation: Medium
Optimum Fermentation Temperature: 65-70°F
Does not ferment well less than 62°F
Alcohol Tolerance: Medium-High
