Budvar Clone II

My second attempt at Budvar was altered to lower the hoping rate a little. It was brewed on may 28th, Memorial Day 2001. Prost to all the Vet's out there.

Type: All grain Size: 11.5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 43 IBU
OG: 1.060 FG: 1.015
Alcohol: 5.8% v/v (4.5% w/w)
Water: All water was RO.
Grain: 2 lb. Belgian Pilsner
25 lb. Budvar Undermodified Pilsner
1 lb. American Munich
1 lb. American Crystal 20L
Mash: 63% efficiency
Mashed in at 112F to rest at 99F for 10 min. Raised to 125F for 30 min. by infusion. Pulled first decoction & added back to raise to 148F for 2 hours. Pulled second decoction & added back to raise to 168F for 10 min. for mash out. I used a RIMS system to recirculate wort & sparge water thru mash tun continuesly, for temperature control
Boil: 90 minutes SG 1.053 13 gallons
1 tablespoon Irish Moss at last 20 min of boil.
Hops: 2 oz. Domestic Saaz (5.4% AA, 90 min.)
2 oz. Domestic Saaz (5.4% AA, 70 min.)
2 oz. Domestic Saaz (5.4% AA, 20 min.)
Yeast: 1/2 gal. starter of Wyeast 2000XL Budvar Yeast. Due to 2 month old yeast had a slow start in primary.
Carbonation: 2.5 volumes Keg: 9.2 psi @ 34°F
Corn Sugar: 4.60 oz. for 10 gallons @ 34°F
