This is a loose adaptation of a pilsner done with corn adjunct and the Sterling Hop. Brewed to a high O.G. and finishing low it is quite strong

Mash: | 75% efficiency | |||||||
Mash crushed malt with corn @149° for 60 minutes, then sparge to 6 gallons with 170° water. | ||||||||
Boil: | 90 minutes | SG 1.070 | 6 gallons | |||||
1 full tsp irish moss at 15 minutes remaining. | ||||||||
Hops: | 2.25 oz. Sterling Pellets (6.2% AA, 60 min.) .5 oz. Sterling Pellets (6.2% AA, 45 min.) .5 oz. Sterling Pellets (6.2% AA, 30 min.) .5 oz. Sterling Pellets (6.2% AA, 15 min.) 1.25 oz. Sterling Pellets (aroma) |

Yeast: | Plain old dry SAF lager yeast. Pitched after force cooling of wort and syphoning off of the trub deposit and heavy aeration. | |||||||
Log: | Ferment First day at room temp then cool to 60° for 3 days, then 55° for 3 days. Rack to secondary @ 1.035 then Hold @ 55° for 2 weeks. After 2 weeks in secondary (or reching 1.009) rack and bottle with corn Sugar and Condition for 3 weeks. then Bottle Lager(age) for 6 weeks to 6 months. |

Tasting: | Some malt seetness but a lot of Saazish aroma and flavor, lots of alcohol tingle. Must chill cool. |
