Steep: | Put the grains in cold water first and bring to a boil and remove. Then add extract. You can add up to two pounds of grain to this recipe to increase body, mouth feel and head rentention and maltiness. Just remember to follow what your taste buds tell you! | |||||||

I use irish moss (clarifier)and malt dextrin (heading agent) religiously. I like it crystal clear and a loucious head on top. | ||||||||
Hops: | 1 oz. Cascade (6% AA, 60 min.) 1 oz. Cascade (6% AA, 15 min.) |

Yeast: | Use an ale yeast that ferments very complete and dry. There will be plenty of residual sweetness from the grain and honey. | |||||||
Log: | Ferment in your basement or a cool place. Between fifty to sixty degrees at the warmest. To help minimize off flavors from the ale yeast. | |||||||
Carbonation: | 2.7 volumes | Corn Sugar: 4.33 oz. for 5 gallons @ 55°F | ||||||
