Heritage Holiday Bock

I first brewed this in July of 1999 and it was ready to consume by
December. It is a different type of Holiday brew, light hop but you will feel very festive after a couple.

Type: Extract w/grain Size: 5.5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 18 IBU
OG: 1.061 FG: 1.020
Alcohol: 5.2% v/v (4.1% w/w)
Water: good tap water or spring water.
Grain: 10 lb. American 2-row
Steep: Mash grains at 160F for 60 min. Strike with 155F water and sparge
enough for a 6 gal starting boil. Before boil, Add extract and stir until blended. Bring to boil and add .75oz of hops. Add irish moss at 30 min. Boil for 45 min and add .5oz hops.
Boil: 60 minutes SG 1.056 6 gallons
4 lb. 0 oz. Amber malt extract
Irish moss at 30 min
Hops: .75 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 2178
Log: Ferment at 60-70f for 14 days, rack to secondary and ferment for 14 days. Bottle and age 3 months at 60-65f. Best at 6 months.
Carbonation: 2.5 volumes Corn Sugar: 4.92 oz. for 5.5 gallons @ 70°F
Whatever you like.
Tasting: Good brew but I like alot more hoppiness.
