Doppeltes Lottchen Doppelbock

Yes, you can brew a tasty bock beer without a using a fridge!

26 HCU (~14 SRM)
Bitterness: 19 IBU
OG: 1.076 FG: 1.014
Alcohol: 7.9% v/v (6.2% w/w)
Water: no water treatment
Grain: 2 lb. American 2-row
2 lb. German Vienna
7 lb. German Munich
0.5 lb. American crystal 90L
Mash: 75% efficiency
mash in with 10.3 qts of water to 152F for 10 minutes
raise to 159F, hold for 60 minutes
raise to 168F for a 10 minute mash out
(I had to use a thick mash, because my mash tun hold only 5 gallons)
Boil: 90 minutes SG 1.071 4.5 gallons
1/2 tsp irish moss for 20 minutes
Hops: 1.5 oz. Hallertauer (3.8% AA, 60 min.)
Yeast: Wyeast #2206 (Bavarian Lager) in a 1/2 gallon starter
Log: 5 days in primary at 58F (plastic)
10 days in secondary at 58F (glass)
(I don't have a beer-fridge so I went ahead and bottled the beer,
let it condition for 10 days at 65F and put the bottles in the regular
fridge)
Carbonation: 0.6 cups of corn sugar (screw the bavarian Reinheitsgebot)
Tasting: Tastes great, the munich malt comes through nicely, it could have a
bit more body (that is higher fg)
