This is a moderatly strong American style lager. SRM is about 4.
Use an American pilsner yeast.

Water: | Brewing water must be "soft". If your water is hard, then it's best to use bottled water. If your water is OK, then filter it through a carbon element to reduce any clorination. | |||||||

Mash: | 77% efficiency | |||||||
Dough in at 95° F for 30 min. Protein rest at 122°F for 30 min. Sac. rest at 140°F for 30 min. Sac. rest at 154° for 30 min. Mash out at 168°F for 15 min. | ||||||||
Boil: | 70 minutes | SG 1.055 | 6.5 gallons | |||||

After 10 min. of boil, add bittering hops, then follow schedule. | ||||||||
Hops: | .75 oz. Pride of Ringwood (8% AA, 60 min.) .31 oz. Styrian Goldings (5.5% AA, 30 min.) .31 oz. Styrian Goldings (5.5% AA, 15 min.) .5 oz. Styrian Goldings (aroma) |

Yeast: | Make a starter of about 1.5 liter at about 1.050 sg. Bring it to full krousen and pitch to 70°F wort. | |||||||
Log: | When bubbles are escaping the lock, move to cooler. Slowly reduce temp.to 50°F for primary fermentation.(about 7-8 days) Rack off to secondary (keg) and reduce temp. slowly to 34°F (about 2 weeks). At six weeks in the secondary, rack to the conditioning keg. | |||||||
Carbonation: | Pressurize at 30 lbs. Shake the keg until no more gas will go in, then crank pressure back to 15 Lbs. Continue lagering for two more weeks, then enjoy! | |||||||
Tasting: | Kind of reminds me of a strong Fosters. I like it. You might think it's horse pee! |
