Steep: | Steep crushed Carastan at 155°F in one gallon of water for 30 minutes. | |||||||

3 lb. Light dry malt extract 1 lb. Cane sugar |

Add 1 teaspoon Irish Moss 15 minutes before the end of boil. | ||||||||
Hops: | 2 oz. Fuggles (4.5% AA, 60 min.) .5 oz. Kent Goldings (5% AA, 15 min.) .5 oz. Kent Goldings (aroma) |

Yeast: | Danstar Nottingham is the yeast of choice. | |||||||
Log: | Primary for one week, secondary for two weeks, ready for drinking in four weeks! | |||||||
Carbonation: | Keg and carbonate to about 1.5 volumes CO2. | |||||||
Tasting: | We sometimes vary the bittering hops depending what's on hand. Styrian Goldings work well. |
