#5 - What's All This Then ?!?

This is my attempt at a good English Bitter - based on
an Old Speckled Hen clone recipe.
I used all Plug Hops - no pellets.

Beer: #5 - What's All This Then ?!? Style: English Ordinary Bitter
Type: Partial mash Size: 5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 39 IBU
OG: 1.044 FG: 1.012
Alcohol: 4.1% v/v (3.2% w/w)
Water: Add one tsp gypsum to mash water
Grain: 3 lb. British pale
4 oz. Wheat malt
12 oz. British crystal 50-60L
Mash: 40% efficiency
mash all grains in 1.5 gallons 150° F for 90 minutes
transfer grains to 1.5 gallons 170° water to sparge (rinse)
Combine all mash liquor into boil pot.
Add DME and cane sugar slowly, and bring to a boil
Boil: 60 minutes SG 1.054 4 gallons
3 lb. Light dry malt extract
8 oz. Cane sugar
Irish moss for last 15 minutes
Hops: 1 oz. Brewers Gold (8.5% AA, 60 min.)
.5 oz. Brewers Gold (8.5% AA, 15 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1098 (Whitbread Ale)
Apparent attenuation 73-75%
Optimum fermentation temp 62-73°
Medium flocculation
Carbonation: prime with 3/4 cup corn sugar
