dark bramling bitter III
A recipe I've been tweaking for a while now.
Brewed as a 10 imperial gallon brew.
A nice English bitter, good for drinking most evenings.

28 imperial pints of mash liquor. Could be a bit thinner to increase yield I think. Mashed 68 ° C for 1 hour 15 min, stirring every 20 mins. Sparged with 8 imperial gallons water at 60 ° C |

Added 1 tablespoon Irish moss in last 10 mins with final hops. | ||||||||
Hops: | 3 oz. Kent Goldings (4.6% AA, 60 min.) 1 oz. Bramling cross (5.8% AA, 60 min.) 1 oz. Kent Goldings (4.6% AA, 15 min.) 1.5 oz. Bramling cross (5.8% AA, 15 min.) |

Yeast: | Sachet of dried Safale S04 strain, woken in 1 pint of wort before pitching | |||||||
Log: | Ferments in ~3 days at 17-20 ° C. Left to settle for abnother 2-3 days before running off into barrel | |||||||
Carbonation: | Add 2 ounces sucrose to barrel to prime, then stored for 2-3 months before drinking. | |||||||
Tasting: | Try more mash liquor. I think it is quite well balanced- could be a bit hoppier for the summer. |
