4 lb. German Munich
2 lb. Dextrine malt (Cara-Pils)
8 oz. Belgian chocolate
Mash: 68% efficiency
5.5 gallons (22 quarts) of 130F water, hold at 122F for 30 minutes.

Add 2.75-3 gallons of boiling water, hold at 158F for 30 minutes.

Mash out at 167-170 for 10 minutes.

Sparge with 170-175F water.
Boil: minutes SG 1.045 12 gallons
.5 tsp moss powder - last 15 minutes.

Steep aroma hops for 2-3 minutes.
Hops: 1 oz. Cascade (7.2% AA, 75 min.)
1 oz. Cascade (7.2% AA, 30 min.)
2 oz. Mt. Hood (5.2% AA, 15 min.)
2 oz. Mt. Hood (aroma)
