My attempt to reproduce a hefeweizen I had at Oak Creek Brewing, Sedona AZ GO THERE!

Bitterness: 14 IBU
OG: 1.052 FG: 1.010
Alcohol: 5.4% v/v (4.3% w/w)
Water: Bottled Spring
Grain: 8 oz. American 6-row
8 oz. Dextrine malt (Cara-Pils)
4 oz. American crystal 40L
Steep: 30 minutes @ 155
Boil: 60 minutes SG 1.131 2 gallons
3.3 lb. Light malt extract
3.3 lb. Wheat extract
1 tsp Irish Moss for last 10 minutes
Hops: 1 oz. Hallertauer (3.95% AA, 60 min.)
1 oz. Hallertauer (3.95% AA, 30 min.)
1 oz. Saaz (3.1% AA, 5 min.)
Yeast: Wyeast #3068 Weihenstephan, starter
Log: Single ferment @ approx. 65 degrees rack to secondary for 1 week to clear
Carbonation: Bottle using 3/4c corn sugar
