Water: filtered water
Grain: 7 lb. American 2-row
9 lb. Wheat malt
8 oz. German Munich
Mash: 85% efficiency
single infusion mash, 150° for 60 minutes, then mash out at 168°.
Boil: 90 minutes SG 1.044 12 gallons
Add Irish moss the last 10 minutes of the boil.
Hops: 2.11 oz. Hallertauer Hersbrucker (2.6% AA, 60 min.)
Yeast: Wyeast's 3056 Bavarian wheat yeast
Log: Ferment in a primary fermenter 5-7 days then rack into secondary until completed.
Carbonation: 4.0 volumes Keg: 52.7 psi @ 70°F
