Heevin' Stephen Hefeweizen

A very easy all extract Bavarian style wheat beer. It took me less than 3 hours from starting to fermenter. Anyone can make this beer.

Type: Extract Size: 5 gallons
Color:
5 HCU (~4 SRM)
Bitterness: 18 IBU
OG: 1.047 FG: 1.012
Alcohol: 4.5% v/v (3.5% w/w)
Water: I added 1 tsp gypsum to my boil at the start. I began with 6.5 gals in my pot and ended with just about 5 gals wort.
Boil: 75 minutes SG 1.036 6.5 gallons
2.4 lb. Light malt extract
.25 lb. Light dry malt extract
3.6 lb. Wheat extract
The malt extract I used was Alexander's Wheat malt extract (60/40). I added the hops 30 minutes into the boil. I also added 1Tsp whole coriander seeds to the same sock as the hop pellets.
Hops: 1 oz. Tettnanger (4.5% AA, 45 min.)
Yeast: Whites pitchable liquid Hefeweizen yeast.
Log: I use a counter-current wort chiller, copper tubing inside a garden hose. So my wort went from the boiling pot @ 200F to the carboy @ 65F in minutes.
Primary fermentation @ 73F for 7 days.
Secondary fermentation @ 73F for 7 days.
Time in bottle- at least 10 days.
Carbonation: Primed with 1 1/3 cups light DME.
Tasting: A nice light, tangy lawn mower (or hammock) on a hot July afternoon. Nice carbonation and a beautiful white head. Don't forget the lemon. Prost!
