Snowflaked Wheat Beer

This is my first attempt at a Wheat Beer. I was inspired by the great flavors that I found in Paulaner Hefeweisen, so I harvested yeast from their bottle and pitched it to make my own little Bavarian treat.

Type: Partial mash Size: 5.5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 23 IBU
OG: 1.047 FG: -
Alcohol: -
Water: I used city water and boiled the water that I added later in the process.
Grain: 2 lb. 8 oz. American 6-row
2 lb. 8 oz. Wheat malt
Mash: 80% efficiency
I mashed the 5 lbs. of grain at 158 for 45 minutes. Mashed out at 170. I sparged slowly and extracted with a fairly high efficiency.
Boil: 60 minutes SG 1.086 3 gallons
3 lb. Wheat extract
Skimmed off hot break with slotted spoon.
Hops: 1 oz. Perle (8% AA, 60 min.)
.5 oz. Perle (8% AA, 15 min.)
.5 oz. Perle (aroma)
Yeast: 2 quart starter, harvested from Paulaner Hefeweisen.
