Pucker Up Weizen

This tasty little concoction is a perfect beer for a nice summer night on the deck. Lemon zest and Coriander seeds give it a unique flavor and pleasant aroma. quickly.

Type: Extract w/grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 13 IBU
OG: 1.056 FG: 1.014
Alcohol: 5.4% v/v (4.3% w/w)
Water: Filtered soft tap water
Grain: 8 oz. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
Steep: Steeped wheat and carapils for 30 minutes at 150°
Boil: 60 minutes SG 1.102 2.75 gallons
1 lb. Light dry malt extract
6 lb. Wheat extract
Irish moss at 15 minutes
1 Tsp crushed Coriander at 15 minutes
Hops: 1 oz. Hallertauer (3.5% AA, 60 min.)
1 oz. Hallertauer (3.5% AA, 30 min.)
1 oz. Tettnanger (aroma)
Yeast: Used a starter and White Labs WLP300 Hefeweizen Ale and had a nice healthy fermentation within 6 hours.
Log: Added the zest of one lemon when I moved it to the secondary. Be sure to microwave the zest for 30 seconds or so to kill any microbes.
Carbonation: 4 oz. of Corn Sugar. Left at room temp for 2 weeks and then moved it to the fridge for 2 more.
Tasting: The Lemon and Coriander add a nice zip. You can increase the amount of zest to suit your tastes, but be careful. Once it's in, it's in.
