Homeland Hefe

This is a Bavarian style Hefeweizen inspired by the Augustiner in Munich, and brewed for my best friend Brenda. This is an awesome Hefe if you enjoy the truly traditional Bavarian style.

Type: All grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 20 IBU
OG: 1.050 FG: 1.012
Alcohol: 4.9% v/v (3.8% w/w)
Water: Tacoma, WA water. Nothing added, nothing needed.
Grain: 5 lb. American 2-row
5 lb. Raw wheat
Mash: 70% efficiency
Infusion mash, 154° for 60 minutes. Mash out up to 162° for 15 minutes. Note: with such a high percentage of German wheat (50%) the mash is pretty thin and the tempreature needs to be monitored closely.
Boil: 60 minutes SG 1.041 6 gallons
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
.75 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: White Labs Platinum 351 Yeast. I typically use WL300, but went for the extra banana and clove flavors that the 351 brings out.
Log: Note: Due to the hops shortage I substituted Sterling for Saaz. Sterling has a slightly higher alpha, but it was the recommended alternative.
Carbonation: Forced CO2, served with 10 lbs of pressure.
