Plain Ol' Hefe

Type: Partial mash Size: 5 gallons
Color:
3 HCU (~3 SRM)
Bitterness: 14 IBU
OG: 1.050 FG: 1.010
Alcohol: 5.2% v/v (4.1% w/w)
Grain: 1 lb. German Pilsner
3 lb. Wheat malt
4 oz. German Light Munich
8 oz. Dextrine malt (Cara-Pils)
8 oz. Flaked wheat
Mash: 60% efficiency
Heat 5 quarts strike water to 137°F. Add grains temp should stabilize at 122°. Hold temp for 20 minutes.
Add 2.8 quarts boiling water to raise temp to 150°F.
Hold 150° for 60 minutes stirring every 5 minutes.
Raise temp to 168°F and sparge with 2.6 gallons of 170° water.
Tranfer to boiling kettle and heat to boil.
Boil: 60 minutes SG 1.072 3.5 gallons
3 lb. Wheat extract (dry)
Add hops during boil according to hopping schedule.
Add 3 lbs of Dry Wheat Extract.
Hops: .5 oz. Hallertauer (4.4% AA, 60 min.)
.25 oz. Hallertauer (4.4% AA, 30 min.)
.25 oz. Hallertauer (4.4% AA, 15 min.)
Yeast: Used Activator pack of Wyeast 3068 Weihenstephan Weizen Yeast.
No starter used.
Log: Pitched yeast at 75°F.
Primary fermentation at 68° for 1 week. Signs of fermentation started within 12 hours.
Racked to secondary for 1 week and bottled.
Carbonation: Used 5 oz of corn sugar for carbonation.
Tasting: Beer tasted excellent when racked to secondary.
Tasted better at bottling.
Beer turned out really good ture hefe taste.
Would not change anything for next batch.
