51 HCU (~22 SRM)
Bitterness: 51 IBU
OG: 1.062 FG: 1.019
Alcohol: 5.6% v/v (4.4% w/w)
Water: 1 tsp Gypsum to soft, neutral water
Grain: .5 lb. American crystal 40L
.5 lb. American chocolate
Steep: 155 F for 50 minutes (Chocolate and Crystal malts)
Boil: 65 minutes SG 1.089 3.5 gallons
5 lb. Light dry malt extract
1 lb. Amber dry malt extract
10 oz. Corn sugar
2 oz. Honey
Added Irish moss at end of boil. Added 2 oz Honey at start of boil
Hops: .5 oz. Galena (13% AA, 60 min.)
.5 oz. Cascade (6% AA, 45 min.)
.5 oz. Galena (13% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: Liquid American Ale II
Log: Four days primary, most fermentation done. Racked to secondary for three more days. Cask condition for 7-10 days. Added half tsp ascorbic acid and 1 tsp Poly Clar at bottling
Carbonation: Lots of head, so watch it when you prime and/or keg... don't go overboard.
Tasting: Spicy, bitter but not overbearing. The chocolate malt just peaks through. Finishes rather clean. Tastes a bit like a highly hopped Bass Ale. Lots of head, so watch it when you prime and/or keg... don't go overboard.
