Bitterness: 36 IBU
OG: 1.045 FG: 1.015
Alcohol: 3.9% v/v (3.1% w/w)
Water: 1 tsp of gypsum in mash
Grain: 8.5 lb. British pale
.5 lb. Wheat malt
1 lb. British crystal 50-60L
Mash: 69% efficiency
Infusion mash and batch sparge: 12.5 quarts of 76 C strike water. Mash in mash-tun at 65 to 67 C for 60 min. Add boiling water until >72 C, and lauter. Add another 10 quarts of 76 C strike water, mix and lauter again.
Boil: 60 minutes SG 1.052 5 gallons
1 tsp irish moss during last 10 min of boil.
Hops: 0.75 oz. Galena (13% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 20 min.)
.5 oz. Kent Goldings (5% AA, 10 min.)
Yeast: Any British ale yeast.
