Steep: | placed all grains in a grain bag. set grain bag in water and remove bag when water temp. is at 150 degrees. the computer didnt add my 1 lb. wheat malt the the grains list so dont forget to add that too. |

7.5 lb. Wheat extract .25 lb. Brown sugar 1.5 lb. Honey |

remove from heat when wort has began to boil. stir in extract, 1/2 c. brown sugar, and the secret ingredient 1/2 lb. mesquite clover honey. stir until contents have dissolved and place back on the burner following the hop schedule. (note: no irish moss was added because we believe that a true, noble wheat beer is more appreciated when it is clouded.) | ||||||||
Hops: | 1 oz. Chinook (12% AA, 60 min.) .25 oz. Fuggles (4.75% AA, 30 min.) .5 oz. Tettnanger (4.5% AA, 15 min.) |

Yeast: | we used a german wheat yeast but still consider it to be a true american wheat,and because that is all we could get our hands on wyeast #3333 |

Log: | brewed and started primary fermentation 7/7/00 we will rack it to the secondary on 7/12/00 adding 4 oz. of Apricot Extract. obviously this beer is still in the process, the hard part now is the waiting.a nice ice cold keg of this is ideal for these long, hot california days out on the boat. we hope to enjoy it and if you try it "CHEERS".We have mention Gary Slafka's name because the apricot idea was from his recipe, so thanks gary!!! |
