Spaltenweisen
This is a grain bill that I use all the time when making Wheat beer. It works excellent! By simply changing the type of hops and/or yeast used you can develop some very tasty final products. In this case the use of Target/Ultra and Spalt hops while using an American Ale yeast the final product was EXCELLENT! I would encourage you to try this recipe. It will be a staple product on tap at all times at my bar.

Single infusion mash 153-158 F. for 60 minutes. 1 Hour sparge time. | ||||||||
Boil: | 60 minutes | SG 1.039 | 14 gallons | |||||

Hops: | .50 oz. Target (11.0% AA, 60 min.) .50 oz. Ultra (2.5% AA, 30 min.) .50 oz. Spalt (2.7% AA, 5 min.) |

Yeast: | White Labs American Ale yeast. Split one tube between to carboys. | |||||||
Log: | Brewed on 4/18/01, racked to secondaries on 5/1/01 and dry hopped with .50 oz. Spalt to each carboy. Kegged on 5/10/01. | |||||||
Carbonation: | Force carbonated in the keg with CO2. | |||||||
Tasting: | It will blow you away. It's a very refreshing, wonderfully hopped american style wheat. An award winner in my and several of my homebrew buddies opinion. |
