Strong Honey Wheat

My second attempt at a wheat. Very strong for an American Wheat, and hoppy to offset the strength. If it weren't a wheat, I'd call it a Strong Ale. Honey is used to boost the alcohol a smidge higher. I think I'll want to serve this very cold, and very carbonated.

11 HCU (~8 SRM)
Bitterness: 28 IBU
OG: 1.071 FG: 1.010
Alcohol: 7.9% v/v (6.2% w/w)
Water: Bottled mineral water (not distilled)
Grain: 2 lb. American crystal 20L
Steep: 155 °F, 30 minutes
Boil: 60 minutes SG 1.065 5.5 gallons
8 lb. Wheat extract
12 oz. Honey
Add honey just before flameout, along with Saaz aroma hops.
Hops: 1.0 oz. Saaz (3.75% AA, 60 min.)
1.0 oz. Tettnanger (4.5% AA, 60 min.)
0.25 oz. Saaz (3.75% AA, 15 min.)
0.25 oz. Saaz (aroma)
Yeast: Wyeast #1056, American Ale.
Carbonation: High carbonation to offset heaviness. 2.8?
