"Best of show" Lemon wheat

I originally set out to make a light summer wheat my friends, and specifically my girlfriend joyce, would like. Little did I know... "Best of show" in the local county fair!

Beer: "Best of show" Lemon wheat Style: American Wheat
Type: Extract w/grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 17 IBU
OG: 1.054 FG: 1.009
Alcohol: 5.8% v/v (4.6% w/w)
Water: Well water
Grain: 1 lb. Raw wheat
Steep: Steep the grains in one gallon water in a grain bag 30 minutes at 155°
Boil: 60 minutes SG 1.054 5 gallons
6.6 lb. Coopers liquid Wheat extract
.5 lb. Muntons wheat dry malt extract
After steeping grains, remove bag and sparge.
Bring the one gallon of steeping water to boil, add the 1/2 lb wheat DME and bittering hops. Boil mixture for 45 minutes.
Add this mixture to main boil pot water (about three 1/2 gallons), bring to boil, add liquid extract and bring to boil, add one teaspoon irish moss.
Add saaz hops last ten minutes.
Add juice of four fresh squeezed lemons last five minutes. This should cause boil to stop, about time it starts again, flame out and start wort chiller.
Hops: 1 oz. Hallertauer (3.9% AA, 60 min.)
1 oz. Saaz (2.5% AA, 10 min.)
Yeast: Safale US-56 dry yeast... This batch was dumped on the yeast cake from a previous pale ale and started bubbling within three hours. I think this was a very important part of how well it turned out.
Log: Seven days in the primary at 70°
Ten days in secondary
I kegged most of this batch, holding back six bottles for fair entry and tasting. I carbonated six bottles with coopers priming drops, one per bottle.
Carbonation: Force carbonated to 30 PSI @ 70° (2.6 atmospheres)
Tasting: Beer judges rated this "Best of show" Tehama county district fair 2005. Some tasting notes: "Beautiful" "fruity, slighty spicy" "Bavarian weizen perfection (almost)" "very smooth finish" "interesting mix of aromas, appropriate" "malt flavor good, good mouthfeel, clean finish" "a very smooth wheat beer. The wheat malt character joins nicely with fruity esters that give way to a semi-dry, clean finish. Nice job!" Basically, this simple little beer seemed to impress the judges a great deal. Enjoy.
