Honey Apricot Ale

Looking for a simple light summer brew, and something to talk about at our next fruit/herb/specialty brew session.

Type: Extract w/grain Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 18 IBU
OG: 1.054 FG: 1.005
Alcohol: 6.3% v/v (5.0% w/w)
Water: Savannah tap
Boil: 60 minutes SG 1.045 6 gallons
3.67 lb. Light dry malt extract
1.05 lb. Wheat extract
1.57 lb. Honey
Irish moss at 15 minutes
Hops: 1 oz. Willamette (5% AA, 60 min.)
Yeast: Nottingham dry
Log: Primary at 70° for 8 days. Racked on top of 4 lbs of sliced pureed apricots in light syrup. Secondary at 70° for 9 days.
Carbonation: 3/4 cup priming sugar
Tasting: At bottling, honey is overpowering. Finished very dry with very low FG. Apricots smell good in there. Hop aroma nil. Sweet tasting from honey, mead-like with only slight bitterness.

Definitely would cut back on the honey by half and use more double the wheat next time.

Over time, the honey has dissipated. Tart from the apricots. Definitely refreshing.
