Ze Heffe-Wit
This is my second attempt at a wheat beer. I've replaced the Carmel Malt with Gambruins Honey malt for a little more sweet flavor and I've added more hops for a more perceived bitterness. I'm adding sweet orange to the boil as well as some coriander which gives it some character of a Belgian Wit.

Yeast: | 1098 British Ale Yeast. The original dried yeast from Whitbread. Produces beers with a clean neutral finish allowing malt and hop character to dominate. Ferments dry & crisp, slightly tart, fruity and well-balanced. Ferments well down to 65°F (18° C). Flocculation - medium; apparent attenuation 73-75% | |||||||

Tasting: | 6May06 - Citrus aroma and flavor, lots of orange. A slight hop bite. This is going to be good. 13May06 - The hop bite is more pronounced now. A great flavor. Sweet, orange honey, with a great hop flavor. The cascades compliment the orange wonderfully. Can't wait to try this after some age in the bottle. |
