Steep: | Steep until 160°F then remove | |||||||
Boil: | 60 minutes | SG 1.145 | 2 gallons | |||||
3 lb. Light dry malt extract 4 lb. Wheat extract(Alexander's syrup) |

After steeping, bring to a good, rolling boil. Add the extracts and the Cascade hops. 10 minutes before the end of the boil, add the Hallertauer hops. |

Yeast: | I use an excellent, commercial brewery quality ale yeast. The name is SAF S0-4. I use 11 1/2 grams. This is what gives this beer an American Wheat Beer. It is distinct from the wiezen beers as their beer has the clover flavors. |

Carbonation: | 3/4 cups corn sugar at bottling time. |
