Summer Fun Wheat

Wanted a refreshing crisp & clean wheat beer for the summer months! Light in body, with a balanced hop bitterness and dry finish.

Grain: 5 lb. 0 oz. American 2-row
4 lb. 0 oz. Wheat malt
0 lb. 8 oz. American crystal 15L
0 lb. 8 oz. Rice Hulls
Mash: 72% efficiency
Mix in rice hulls well to prevent stuck mash/sparge. Single infusion mash @ 150°F target for 75 mins with 3.15 gal. Single batch sparge with 4.6 gal @ 168°F.
Boil: 60 minutes SG 1.041 6.25 gallons
Add .25 tsp Irish Moss @ 10 min. left in boil.
Hops: .75 oz. Mt. Hood (3.9% AA, 60 min.)
.75 oz. Mt. Hood (3.9% AA, 30 min.)
.75 oz. Liberty (3% AA, 15 min.)
Yeast: Dry English Ale Yeast(#WLP007) via 1500ml starter.
Log: Brewed 7/26/09. Primary for 14 days @ 67°F. Then keg/bottle. Age for 2-4 weeks in refrigerator, then start drinking!
Carbonation: 2.6 volumes Keg: 18.8 psi @ 50°F
Tasting: Refreshing & wet on the palette, with a light wheat tang. The hop bitterness is clean and spicy. A thick head leaves nice foam on the rim on the way down. A very drinkable summer beer! *note* there is no floral or citrus in this hop profile. It tastes more like Hallertau/Hersbrucker... You could always replace the Liberty addition with a Cascade or Centennial for a more citrusy flavor if you want that.
